Page A32 MAY 2019 FUNERAL HOME & CEMETERY NEWS S ec t i on A (Memories of Jack’s Recipes) Original Recipes from Dottie and Jack Frediani Shared by Kate Frediani-Gorman Cremation Products Inc. 800-837-0701 www.cremationproductsinc.com Mushroom Sauce: ¾ cup chicken broth 1 Tbs flour 1 Tbs butter 1 tsp finely chopped green onions, white part only 1½ cup thinly sliced mushrooms ½ cup whipping cream Salt and freshly ground black pepper Nutmeg Pinch of ground red pepper Combine broth and flour in small bowl and stir until flour is dissolved. Melt butter in medium skil- let over medium high heat. Add onion and sauté until tender, about 1 minute. Reduce heat to me- dium. Add mushrooms and cook about 2 to 3 min- utes. Stir in broth. Increase heat to medium high and cook until slightly thickened, stirring occasion- ally, about 10 minutes. Blend in cream, salt and pepper. Season to taste with nutmeg and ground red pepper. Keep sauce warm and prepare meat. 1 pound veal scaloppini or 1 pound chicken breasts, skinned and boned 2 Tbs flour Salt and freshly ground black pepper 1 egg 2 Tbs water 1½ cup bread crumbs 3-5 Tbs oil 1-2 Tbs butter Pound meat between 2 sheets of waxed paper until very thin. Combine flour, salt and pepper in pie plate. Beat egg with water in shallow dish. Dredge meat in flour, dip into egg mixture and then roll in bread crumbs. Lightly pound slices with flat of knife so bread crumbs adhere to meat. Heat 3 Tbs oil with 1 Tbs butter, in large skillet over medium high heat. Add meat in batches and sauté until browned, turning once, about 3 to 5 minutes, adding more oil and butter as necessary. Transfer to platter and spoon sauce over meat. The six hour program consisted of two presenters. Martha Thayer presented a three hour program entitled, Serving a Perpetrators Family Following a Mass Killing Event. With over 30 years of professional funeral service experience, Thayer serves as department chair of the mor- tuary science program at Arapahoe Community College in Colorado, is an End-of-Life advocate in the Colorado state legislature and has been called upon as an expert witness in legal cases related to funeral service issues. Thayer has a personal connection to the Columbine high school mass shooting and the Aurora movie theatre massacre. Thayer holds a Master of Arts and Bachelor of Science degree from Colorado Christian University and her mortuary science diploma from Dallas Institute of Funeral Service. The second half of the program, TJ Roser and Sarah Czajkowski, from the Center for Organ Recovery and Education (CORE) presented a program on organ and tissue recovery and education. Roser currently serves as funeral director/coroner liaison with CORE. A PIMS alumnus, Roser continues trade work and is a deputy coroner with the Indiana County Coroner’s office. He has served as an owner/partner of a family funeral home and operated a crematorium that served seven counties in Pennsylvania. Roser was a key player in updating the PA Uniform Anatomical Gift Act and works continuously to improve working relationships with funeral directors/ coroners with donation. Czajkowski is also a PIMS alum- na and serves as CORE’s liaison at the Allegheny County Medical Examiner’s Office. The programs were quite ed- ucational and presented to a sold-out crowd. During the lunch break, members of PIMS student sen- ate held a 50/50 raffle and raised over a thousand dollars! The lucky winner took home $525 prize! Send Us Your News!
