1 egg, lightly beaten
¼ cup fat-free mayonnaise
¼ cup soft bread crumbs
2 green onions, chopped
1 Tbs minced parsley
1 tsp dry mustard
¼ tsp each salt and pepper
4 cans (6 oz. each) crabmeat, drained and flaked
Seafood sauce
In a bowl, combine all ingredients except butter,
oil, crab and sauce. Add crab; mix gently. Shape
rounded tablespoons into patties. In a large non-
stick skillet, cook patties in butter and oil over me-
dium heat 3-5 mins on each side or until golden
brown. Serve with seafood sauce. Some prefer tartar
sauce.
This refreshing salad is based on
the popular cold soup
GAZPACHO-STYLE SALAD
3 medium tomatoes
1 medium cucumber, thinly sliced
1 medium green pepper, chopped
1 small red onion, thinly sliced
3 Tbs snipped parsley
3 Tbs vinegar
1½ tsp sugar
¼ cup salad oil
1 garlic clove, minced
¼ tsp dried basil, crushed
¼ tsp cumin
¼ tsp dry mustard
Dash bottled hot pepper sauce
Cut each tomato into 8 wedges. In a bowl,
combine tomatoes, cucumber, green pepper, on-
ion and parsley. For dressing, in a screw-top jar
combine oil, vinegar, sugar, garlic, basil, cumin,
mustard and hot pepper sauce. Shake well. Pour
over vegetable mixture; toss lightly to coat. Cov-
er and chill for 2 to 3 hours, stirring occasion-
ally. Transfer to a salad bowl. Garnish with crou-
tons and avocado slices, if desired.

independent funeral service seeking
positions as funeral directors and fu-
ture leaders.
Brandy Carter, enrolled in the Mor-
tuary Science Program at
Wayne State
University,
will graduate in August
2017. Currently employed part-time
at
A.J. Desmond & Sons Funeral
Directors,
Carter hopes to continue
her employment there once licensed
and degreed. Carter comes to the fu-
neral profession with 16 years in the
hospitality industry.
“In the future, I hope to inspire
other students to pursue this profes-
sion,” said Carter. I’m truly thankful
for this scholarship and the invest-
ment in my success in funeral ser-
vice.”
Michael Hegg, a full-time student
at the
Ivy Tech Community College
School of Mortuary Science,
expects to
graduate in May 2017. Hegg served
as a uniformed patrol officer for the
Indianapolis Police Department
for 27 years and retired in October
2015. During his years of service, he
was awarded several honors includ-
ing Police Officer of the Year, Medal
of Valor, and the Purple Heart Med-
al.
“I am very honored to be a recip-
ient of the Second-Career Scholar-
ship,” said Hegg.
Karoline Davidson attends
Chan-
dler-Gilbert Community College’s
Mortuary Science
program and ex-
pects to graduate in May 2017. She is
currently employed at Selected mem-
ber firm

in Mesa, AZ. Davidson’s
previous career in TV journalism and
served as a general assignment report-
er for 12 years. After leaving the news
business, she turned to work with the
elderly, serving as a home care com-
panion and volunteering at hospice.
“I specifically sought out Bunker
Family Funerals because I wanted to
work for a small family-owned and
operated funeral home. It is a perfect
fit for me,” said Davidson. “My goal
is to make sure families I serve feel
relief, support and comfort. As a fu-
neral director, I aspire to tell people’s
stories and help families heal.”
Since the award was first launched
in late 2010, the Board of Trustees
has awarded 28 scholarships to de-
serving individuals seeking a career
in funeral service.

The Second-Career Scholarship is
one of several programs of the Se-
lected Educational Trust, which was
founded by
Selected Independent
Funeral Homes,
a worldwide pro-
fessional association of independent,
locally-owned funeral homes found-
ed in 1917. By creating the program,
the rust hopes to attract and assist fu-
ture practitioners interested in en-
tering the profession. More infor-
