Combine shrimp, beans, green pepper, celery and onion in large bowl. Combine the remaining ingredients except tomatoes and lettuce; mix well. Pour over shrimp mixture; toss lightly to coat. Cover and chill 2-24 hours, tossing now and then. Spoon onto lettucelined plates, garnish with tomatoes. Serve with additional picante sauce. TIP: When celery loses its crispness, place it in a pan of water with raw potato slices for a few hours. When you remove the celery, it will be crisp. SPAGHETTI SQUASH WITH TOMATOES 1 medium spaghetti squash 2 Tbsp water ½ cup sliced green onions ½ tsp salt ½ cup chopped red or green pepper 2 large tomatoes, chopped 2 tsp minced fresh basil ¾ tsp dill weed 2 Tbsp grated parmesan Cut squash in half lengthwise; discard seeds. Put cut side down in baking dish and add hot water ½-inch deep. Cover and bake at 350º for 30-40 minutes until tender. In a skillet, heat water; add pepper and onions. Cook and stir for 2 minutes; stir in tomatoes, parsley, dill, basil, and salt. Bring to boil, reduce heat and simmer uncovered for 5 minutes until tender. When squash is cool, scoop out pulp, separating strands with a fork; place in large bowl. Add tomato mixture and toss to combine.
