We’ll use lamb, instead of “sheep!” IRISH STEW 1½ pounds lamb stew meat 4 cups water 1 medium onion, sliced ½ cup cubed turnip 2 Tbsp flour ½ tsp each dried thyme, marjoram and rosemary, crushed ½ tsp pepper 1 tsp salt 2 tsp olive oil 2 cups sliced, peeled potatoes ½ cup sliced carrots 2 Tbsp fat-free milk 3 Tbsp minced parsley In a Dutch oven, brown lamb in oil over medium heat. Add water; bring to a boil. Cover and simmer for 1 hour. Add potatoes, onion, carrots, turnip and seasonings. Bring to a boil. Cover and simmer for 30 minutes or until vegetables are tender. In a small bowl, combine the flour and milk until smooth; stir into stew. Add parsley. Bring to a boil; cook and stir for 2 minutes or until thickened. Good Eating! ROAST POTATOES WITH WINE AND ONIONS 2 Tbsp olive oil 1-2 large onions, sliced 3 garlic cloves, sliced 10 small red potatoes ½ tsp salt Freshly ground black pepper to taste 1 cup white wine 1 Tbsp chopped parsley (optional) Preheat oven to 450º F. Heat the olive oil over moderately high heat in an ovenproof roasting pan or skillet just large enough to hold the potatoes in a single layer. Add the onion and garlic and sauté until the onion softens, about 3 minutes. Add the potatoes, salt and pepper. Sauté 5 minutes, then add the wine and transfer the pan to the oven. Bake, uncovered until the potatoes are tender and most but not all the wine has evaporated, about 35 minutes. When potatoes are cool enough to handle, cut them in half. To serve, reheat the potatoes and onions and toss with parsley. Makes 4 servings. Mercy University is accredited by The Middle States Commission on Higher Education (MSCHE) and has recognized the accredited funeral service and mortuary science program degree and those who have graduated, currently attending, or have not pursued completing their degree. This pivotal first-of-its-kind program is designed to help funeral service professionals to progress to a bachelor’s degree in business management from a regionally accredited university in as little as 12 to 18 months. Students can transfer up to 62 credits that they have already earned at all accredited funeral service mortuary colleges. The program is entirely online, and courses are offered asynchronously, meaning there are no fixed class meeting times. Faculty are leaders in their field with years of practical hands-on experience, whether they are teaching core liberal arts courses or funeral and mortuary management courses. Students can simultaneously work on completing their Associate’s degrees while starting work on their Bachelor’s degrees. Students may be eligible for educational loans. The program enhances professional licensing and other funeral service credentials, as well as advancing personal and career development. The degree at Mercy prepares students with the skills they need to be highly successful in this field from day one. Accredited Funeral Service and Mortuary Science colleges are also welcome to discuss articulation agreements with Mercy. Industry suppliers are also welcome to discuss certification and credentialing programs. Mercy is available to fulfill all the Gen Ed requirements for mortuary science programs so that they can focus on their funeral service and mortuary science course offerings. Vector D was formed by experienced higher education administrators and faculty consisting of a fourth-generation licensed funeral director, the grandson of a funeral director, and a business and economics professor associated with New York and Long Island Universities.
