GAZPACHO-STYLE SALAD 3 medium tomatoes 1 medium cucumber, thinly sliced 1 medium green pepper, chopped 1 small red onion, thinly sliced 3 Tbsp snipped parsley 3 Tbsp vinegar 1½ tsp sugar ¼ cup salad oil 1 clove garlic, minced ¼ tsp dried basil, crushed ¼ tsp cumin ¼ tsp dry mustard Dash bottled hot pepper sauce Cut each tomato into 8 wedges. In a bowl, combine tomatoes, cucumber, green pepper, onion and parsley. For dressing, in a screw-top jar combine oil, vinegar, sugar, garlic, basil, cumin, mustard and pepper sauce. Shake well. Pour over vegetable mixture; toss lightly to coat. Cover and chill for 2 to 3 hours, stirring occasionally. Transfer to a salad bowl. Garnish with croutons and avocado slices, if desired. CRAB CAKES 1 egg, lightly beaten ¼ cup fat-free mayonnaise ¼ cup soft bread crumbs 2 green onions, chopped 1 Tbsp minced parsley 1 tsp dry mustard ¼ tsp each salt and pepper 4 6-ounce cans crabmeat, drained and flaked Seafood sauce In a bowl, combine all ingredients except butter, oil, crab and sauce. Add crab; mix gently. Shape rounded tablespoons into patties. In a large nonstick skillet, cook patties in butter and oil over medium heat, 3-5 minutes on each side, or until golden brown. Serve with seafood sauce – some prefer tartar sauce. NEWS Association CONTINUED New Jersey State FDA Election Results tember 21-24, 2022. The theme for this year’s meeting is “Connect. Collaborate. Hernandez MANASQUAN,NJ— The New Jersey State Funeral Directors Association has announced the results of the 2022 elections. Jonathan R. Bender and Rosa E. Hernandez have been elected to fill two delegate-at-large seats on the New Jersey State Funeral Directors Association board of directors. In the first contested election for an NJSFDA board seat since 2016, Bender, a Passaic County Funeral Directors Association member, and Hernandez, an incumbent delegate-at-large and a Hudson County Funeral Directors Association member, received the most votes for the two positions. Also running was Antonietta E. Cuoco, a Middlesex and Somerset Funeral Directors Association member. Bender, who served as the president of the Passaic County Funeral Directors Association from 2019 to 2021, pledged that, if elected, he would continue the association’s advocacy for increased reimbursements for Work First New Jersey funerals and would work to develop the current and next generations of funeral industry leaders. Hernandez, who has served as a delegate-at-large since 2020, said her perspective as a Latina millennial and a woman was a benefit to the NJSFDA. She added that she was dedicated to helping the association maintain its excellence and achieve even greater success. Bender and Hernandez took their seats on September 1, 2022.
