Instead of corned beef and cabbage, let’s serve up an Irish Stew this St. Paddy’s Day. We’ll use lamb, instead of “sheep”! IRISH STEW 1½ pounds lamb stew meat 4 cups water 1 medium onion, sliced ½ cup turnip, cubed 2 Tbsp flour ½ tsp each dried thyme, marjoram and rosemary, crushed ½ tsp pepper 1 tsp salt 2 tsp olive oil 2 cups sliced, peeled potatoes ½ cup sliced carrots 2 Tbsp fat-free milk 3 Tbsp minced parsley In a Dutch oven, brown lamb in oil over me- dium heat. Add water; bring to a boil. Cov- er and simmer for 1 hour. Add potatoes, on- ion, carrots, turnips and seasonings. Bring to a boil. Cover and simmer for 30 minutes or un- til vegetables are tender. In a small bowl, com- bine the flour and milk until smooth; stir into stew. Add parsley. Bring to a boil; cook and stir for 2 minutes or until thickened. 2 Tbsp olive oil 1-2 large onions, sliced 3 garlic cloves, sliced 10 small red potatoes ½ tsp salt Freshly ground black pepper to taste 1 cup white wine 1 Tbsp chopped parsley (optional) Preheat oven to 450º F. Heat the olive oil over medium high heat in an ovenproof roasting pan or skillet just large enough to hold the potatoes in a single layer. Add the onion and garlic and sauté until the onion softens, about 3 minutes. Add the potatoes, salt and pepper. Sauté 5 minutes, then add the wine and transfer the pan to the oven. Bake, uncovered, until the potatoes are tender and most but not all of the wine has evaporated, about 35 minutes. When potatoes are cool enough to handle, cut them in half. To serve, reheat the potatoes and onions and toss with parsley. Makes 4 servings. Lights. Camera. Funeral. The easiest way to accomplish this consent and disclosure is by having the family sign off on a simple broadcasting release. Permission Issues Separate from permission from individuals (see Consent above) is permission to be able to record or broadcast an event from where you are. For funeral homes, this should be easy so long as you are in your building. However, if you go to an offsite location, like a church or a private building, then you should obtain permission to broadcast and/or record. Oth- erwise, they may be able to force the video to be re- moved at a later date. For cemeteries, or funeral homes recording at cem- eteries, there could be an additional issue for permis- sion. Many cemeteries have rules and regulations that prohibit or severely limit photography and filming on the property. As a cemetery, in this new age of vir- tual services, you may want to update your rules to allow such events. The easiest change is to allow the recording and/or broadcasting with the permission of the lot owner, or other person who would have legal standing for the services at the graveside. www.
