PESTO ORZO WITH GRAPE TOMATOES & GRI LLED CHICKEN 2 whole boneless, skinless chicken breasts 1-2 jars pesto, pre-made or homemade 1 container grape tomatoes, cut in half Pine nuts, lightly toasted Cook orzo using the directions on the package, however, use half chicken broth and half water. Liberally coat chicken breasts with olive oil, kosher salt, garlic powder and pepper on both sides. Grill chicken, then dice into cubes. If you want to make your own pesto, puree and blend fresh basil, parmesan cheese, olive oil, a handful of pine nuts, salt and pepper. You can also use half premade and half homemade pesto. To the cooked orzo add grilled chicken, pesto, tomato halves, and toasted pine nuts. Salt and pepper to taste. FRIED ARTICHOKE HEARTS 1 package frozen artichoke hearts, or 1-2 cans, drained and rinsed 1-2 eggs, beaten with a little water Panko breadcrumbs, plain or Italian 1 jar pepperoncini, sliced Dredge artichoke hearts first in flour (add a little salt and pepper), then in egg, and lastly in breadcrumbs. Fry artichoke hearts in a couple of inches of olive oil (be liberal with this, more oil gives them great color and crunch). Drain on paper towels. Preceding the Annual Meeting, Dale Atkinson’s popular Board Member Training program will be held February 28, 2023. The Annual Meeting provides regulators and other funeral service professionals the opportunity for industry connection, conversation, and collaboration. The preliminary agenda topics include National Board Exam updates, the Job/Task Analysis, an exploration into some of the higher-performing mortuary science programs, top regulatory cases, and interactive forums. These sessions will provide attendees with the opportunity to meet with colleagues from the different facets of the funeral service profession to discuss collective interests and knowledge, as well as shared difficulties and guidance. In an effort to reach the goal of full participation in the Annual Meeting of the Delegate Assembly, The Conference Board of Directors is pleased to continue offering delegate grants for the 2023 Annual Meeting. This program awards each member board with one complimentary travel grant to send a qualified delegate to attend the meeting.
