Remove from heat. Add flour and peanut butter, stirring until peanut butter is melted. Gradually stir in broth. Bring to boiling; reduce heat and simmer, uncovered, for 10 minutes, stirring occasionally. Just before serving, add the milk or cream and simmer until heated thoroughly. Garnish with a sprinkling of chopped peanuts. Serve with French bread heated until crisp. Why not try a really different salad? This colorful salad combines shrimp, black beans and vegetables with a spicy-sweet dressing to blend and balance flavors. SHRIMP AND BLACK BEAN SALAD 1 pound cooked, shelled shrimp 1 15-ounce can black beans, drained ½ cup celery, thinly sliced 1 small green pepper, cut in strips 2/3 cup mild picante sauce 1/3 cup red onion, thinly sliced 2 Tbsp cilantro, chopped 2 Tbsp oil 2 Tbsp honey 1 tsp lime peel, 2 tsp juice Lettuce leaves Cherry tomato halves Combine shrimp, beans, green pepper, celery and onion in large bowl. Combine remaining ingredients except tomatoes and lettuce; mix well. Pour over shrimp mixture; toss lightly to coat. Cover and chill 2-24 hours, tossing now and then. BROOKFIELD,WI— The National Funeral Direc- tors Association (NFDA) policy board met on July 7 in Asheville, NC, and elect- ed Christopher P. Robin- son, CFSP, CCO, of Rob- inson Funeral Home in Easley, SC, and John W. Wenig of Wenig Funeral Homes in Sheboygan Falls, WI to serve as at-large rep- resentatives on the associ- ation’s board of directors. They will begin two-year terms of service immediately following the 2018 NFDA International Convention and Expo, October 14–17 in Salt Lake City, UT. Robinson’s roots in funer- al service date to a summer job in high school digging graves by hand. After earn- ing a bachelor’s degree in German and European his- tory and a master’s degree in international business, he worked in the banking industry. Back in South Carolina, Robinson’s father continued to expand his funeral home through the purchase of a new location and by establishing a per- petual care cemetery. With no other relatives working in alongside his father, after five years Robinson decided to leave banking and return to his grave-digging roots to become a funeral director. In his candidate state- ment, Robinson said, “My fellow funeral directors in South Carolina have al- lowed me the opportunity to serve our state association in many roles. Through my work with many fine funer- al directors and fellow state officers, I have learned the challenges associations have faced. While the solutions to state association issues are not always obvious and easy, together we can and have come to the proper outcome through thought- ful study and analysis. The same thought processes and analysis would apply to the issues the NFDA board of directors encounters.” Wenig is a first-genera- tion funeral director who, after working for several funeral homes, purchased his own funeral establish- ments in Sheboygan Falls and Oostburg, WI. Wenig has served in various lead- ership capacities on the lo- cal, state and national lev- el, including as the state of Wisconsin’s representative to the NFDA policy board. In a special election held in October 2017, Wenig was elected to serve a one-year term as an at-large repre- sentative on the NFDA board of directors. “As a working funeral di- rector, I understand the challenges and opportu- nities that exist in today’s current market and in- dustry,” Wenig said in his candidate statement. “This background has enabled me to provide an experi- enced perspective to other funeral professionals with- in our association.
