Combine remaining ingredients, except tomatoes and lettuce. Mix well and pour over shrimp mixture; toss lightly to coat. Cover and chill 2 – 24 hours, tossing now and then. Spoon onto lettuce lined plates, garnish with tomatoes. Serve with additional picante sauce. TIP: When celery loses its crispness, place it in a pan of water with raw potato slices for a few hours. When you remove the celery, it will be crisp. Good Eating! SHRIMP AND BLACK BEAN SALAD VEGETARIAN QUESADILLAS 1 tsp olive oil 1 onion sliced 1 sweet green pepper, sliced ½ tsp ground cumin 1 15-ounce can spiced chili beans, drained and liquid reserved 1 10-ounce package frozen corn kernels, thawed 6 ounces shredded, reduced-fat Monterey Jack and Cheddar cheese mix 4 flour tortillas (10-inch) Preheat oven to 450º. Heat oil in large nonstick skillet over medium heat. Add onion, green pepper and cumin. Cook 5 minutes, adding enough reserved bean liquid to prevent sticking. Stir in corn. Spoon green pepper mixture, beans and cheese on each flour tortilla, dividing the ingredients equally. Fold tortillas over to enclose filling. Place in baking pan. Bake at 450º for 5 minutes or until thoroughly heated. Makes 4 servings. The decision comes as a result of ongoing public health and safety concerns surrounding the coronavirus pandemic and input from the ICCFA leadership, staff, ICCFA University Deans, public health experts, and our membership. Following both required and recommended public health guidelines, we would not be able to safely provide the learn- ing opportunities that occur both in and out of the class- room, and that combine to create an exceptional ICCFAU experience for students and professors alike. At this time, the ICCFA would like to extend our gratitude to the Emory Con- ference Center Hotel. They have worked closely with us throughout this process in attempts to make our event a reality. While safety concerns prevent us from gathering in- person this July, we look for- ward to hosting our inaugu- ral year at Emory in 2021.
