Add more mayo or sour cream if nec- essary to make a moist, creamy salad. Mound on a serving plate and garnish. Serves 6. Maybe a light supper? OPEN SESAME CHICKEN ¼ cup (½ stick) melted butter Juice of 1 lemon 1/3 cup freshly grated parmesan cheese 1/3 cup breadcrumbs 1 3-pound chicken, skinned, cut into serving pieces 2 Tbs (¼ stick) melted butter Paprika Sesame seeds Preheat oven to 325º. Grease 2-quart rectangular baking dish. Combine ¼ cup melted butter with lemon juice in shallow bowl. Mix cheese and bread- crumbs in shallow dish. Dip chicken pieces in but- ter mixture and then roll in breadcrumbs, coating well. Arrange in single layer baking dish. Drizzle remaining butter over chicken. Sprinkle generous- ly with paprika and sesame seeds. Bake for 1 hour, basting frequently (cover dish with foil if chicken browns too quickly). Makes 4 servings. Jon Rettig , Presi- dent of the Ohio Board of Embalmers and Funeral Direc- tors discussed new preneed and cremation legislation passed in Ohio and how it has affected various stakeholders. The new Federal Trade Commission Funeral Rule Co- ordinator, Patricia Poss , gave a presentation that includ- ed an overview of the Funeral Rule and discussed civil penalties, the Funeral Rule Offender Program, and the upcoming regulatory review. The meeting also included pre- sentations from two regulatory board executives. Montana Board of Funeral Service Executive Offi- cer, Lucy Richards , provided at- tendees with a case study on pro- tecting the public by ensuring licensee compliance. Ms. Richards discussed the Montana Board’s ex- perience in addressing regulato- ry oversight of trust accounts, the process of determining statutory authority, and the development of rules. Jennifer Kandt , the Execu- tive Director of the Nevada Funer- al Board offered a regulatory per- spective on body brokerage. Ms. Kandt shared the headline grab- bing incident involving a funeral home and body brokerage com- pany in Nevada, and the collabo- ration the Nevada Funeral Board and other agencies to halt and rep- rimand the responsible party. District Meetings were also held to give attendees the oppor- tunity to discuss issues affecting their boards in smaller group set- tings. Elections were held for dis- tricts three, five, eight, and nine. Charles Perine , Executive Direc- tor of the Alabama Board of Fu- neral Service was elected to his sec- ond term representing District 3. Robert Gribble , Executive Direc- tor of the Tennessee Board of Fu- neral Directors and Embalmers, was elected to represent District 5. Registrar for the Funeral and Cre- mation Services Council of Sas- katchewan, Sandy Mahon , was elected to represent District 8, and Jennifer Kandt , Executive Direc- tor of the Nevada Funeral Board, was elected to represent District 9. Elections were also held for the Executive Committee of the Board of Directors. District 4 Director Mark Rans- ford was elected to serve as President, District 6 Direc- tor Mack Smith was elected to serve as Vice President District 3 Director Charles Perine was elected to service as Secretary-Treasurer, and District 7 Director Edward Muhleisen will serve as Past President. Charles Perine, District 3 Director, represents funeral ser- vice regulators from Alabama, Florida, Georgia, Mississippi, North Carolina, and South Carolina. Mr. Perine was elected to the Board of Directors in 2017 to complete his predeces- sor’s term and was elected Secretary-Treasurer of the Board in 2018. In addition to Director, he was elected to continue to serve as the Secretary-Treasurer on the Board. Mr. Perine has been the Executive Director for the Alabama Board of Funeral Service since 2013 and previously served as the Associate Executive Director. He previously served onThe Conference Model Practice Act Committee and the Model Practice Act Review Committee. Mr. Perine is a licensed fu- neral director and embalmer in the state of Alabama. Robert Gribble, District 5 Director, represents funer- al service regulators from Arkansas, Illinois, Kentucky, Missouri, and Tennessee. Mr. Gribble was previously ap- pointed to the Board in 2018. He has over 40 years of experience in the funeral profession, and he has served as the Executive Director of the Tennessee Board of Funeral Directors and Embalmers for than 15 years. Prior to his current role, Mr. Gribble owned and man- aged a funeral home for more than 20 years in the Upper Cumberland area of Tennessee. Throughout his dedicated funeral service career, he has been a noted leader inTennes- see’s funeral industry, previously serving as President of the Tennessee Funeral Directors Association, Inc ., and the Tennessee Board of Funeral Directors & Embalmers. He is a gradu- ate of the Kentucky School of Mortuary Science , the Tennessee Government Management Institute administered through the University of Tennessee’s Institute for Public Service, and the Academy of Professional Funeral Service Practice.
